Melting Marshmallow Snowman Biscuit

I’ve seen these melting marshmallow snowmen all over the Internet and really wanted to give them a go.  They were a big hit with my boys and I’m sure will become a Christmas tradition in our house. It’s an easy no cook Christmas recipe for kids.

You Will Need:

  • 14 digestive biscuits (or any other plain flat biscuit)
  • 14 white marshmallows
  • 200g icing sugar
  • Black and orange writing icing
  • Strawberry laces

How to make Melting Marshmallow Snowmen Bicuits:

  • This recipe is easiest to do if you set it up like a production line.
  • Lay out your biscuits
  • Mix up the icing sugar with a little water so that you have a thick paste.  It goes runny really quickly so best to just add a teaspoon of water at a time.
  • Dab black writing icing for the eyes and mouth onto each marshmallow.
  • For the nose I squirted some orange icing onto a plate and then just a skewer to pick a little up, place in the centre and then drag to one side.  It’s easier than it sounds.
  • Spoon some icing onto each biscuit and then place the marshmallow snowman head on top.
  • Wrap a strawberry lace around to create a little scarf.



Best Version I’ve Seen So Far:

My favourite version of the winter holidays melted snowman biscuits is made by the ski hosts and childcare seasonaires in Sno ski chalets. They are made with the kids on holiday in their luxury catered chalets, while the adults are out skiing and snowboarding.  They help the children get really elaborate with their design, while not needing any sort of baking, and they don’t even make the icing themselves, as they just microwave to make readymade runnier – it’s all off-the-shelf products you can even find in a ski resort high in the alpine mountains. I guess the lack of baking and cleaning up means more time for the chalet staff to go out and ski themselves!

This zero-cooking version of the melted snow man cookies requires the same ingredients as above, with the addition of chocolate and coloured sprinkles (try to get the longer ones so they can create the arms and nose), and the digestives are chocolate rather than plain. The real magic is in making them in a cosy alpine ski chalet, and of course the parents arriving back for afternoon tea and cakes being incredibly grateful for the creations of their skiing progeny. You can almost picture the snow falling outside the chalet windows!
